The cafes are filled on weekends with menu items you can easily make yourself. Avoid the queues, save your cash and relax at home with these simple, great-tasting brunch recipes. #smashedavo eat your heart out.

1. Bircher muesli

Bircher muesli is a great thing to mix the night before. You can make enough for about 3 days in advance. Save time and about $15 a bowl, as this is super easy to make and you can add extra berries, a compote or seeds to taste.

2. Pancakes

These fluffy American-style pancakes or pikelets are quick to make. Choose your own toppings, or go with the traditional maple syrup or lemon and sugar.

3. Egg and bacon roll

This super quick roll is perfect to take to the park with a takeaway coffee.

4. Baked beans

Homemade baked beans are a great brunch or Sunday dinner. Packed with goodness, you can make them in bulk and freeze for the weeks ahead.

5. Scrambled or poached eggs

Scrambled eggs are a great breakfast (an original superfood?) – you get a great protein hit that will last all morning. Here we show you how to scramble and poach eggs to perfection. If scrambling eggs in a non-stick pan, use oil or butter rather than spray oil, to preserve you pan. Serve with some sourdough toast, wilted spinach or smashed avocado, bacon and tomato chutney. Delicious.

For a quick scramble, melt 20g of butter in a non-stick pan on a high heat. Whisk two eggs and 3 tbsp/60ml of milk together. Pour egg mixture into the hot pan once the butter is bubbling nicely. Leave for about 20 seconds, then stir with a silicone spatula. Leave for a further 20 seconds and then stir again. Cook eggs for a further 20 seconds or until cooked to your liking. Serve immediately with sourdough, salt and pepper and other accompaniments.
