This week we are mixing up barbecuing, Mexican, vegetarian and some freezer meals for our spring meal plan. Roast the vegetables for the veggie patties when cooking another meal to save time. Anzac biscuits are an easy lunchbox snack this week – you can also double the ingredients and freeze half the batch in its raw form as a log, to make it easier to simply slice and cook quickly later on. Jacket potatoes are making their debut on the super simple meal list this week. Use any leftover ingredients or things you have in your pantry and refrigerator. This week you can do a fair bit of the cooking on the barbecue again if weather permits. Building in the leftovers meal is a great way to cut down effort in the kitchen – make it a pot luck night with any extra portions you have. The lemon syrup cake is freezable, so remember to cut it into portions before you pop it in the freezer. Done.

It is a week filled with fast and family-friendly meals. The Thai pork curry – one of this week’s freezable meals – is a great introduction to curries for young children. You can swap the pork mince with chicken mince if you prefer. Our mid-week meal is Aglio e olio e pesce, which we cook with flathead, blue eye, snapper or gem fish. Cook it on the day you buy the fish preferably. Some apple muffins for the lunches, and you are set for the week.

The barbecue will get a good workout this week, with three meals you can cook on it. This week we are doubling the marinated Greek pork skewers and the split pea dahl. We love the simplicity of the Asian beef mince, which is a meal that is ready in minutes. Carrot cake makes a nice freezable snack too. Dinner done.
