Can’t tell you how much we love the Middle eastern meatballs recipe. And now the weather is warming up (slowly in some places) Pad Thai is a great, fresh meal for spring. And with berries coming into season, you can even use fresh blueberries for berry muffins rather than frozen for this week’s lunchbox snacks. Dinner done.

MEAL PLAN #46: Spring

Monday – Bean and barley braise – double and freeze half. Recipe on the app and the blog.

Tuesday – Middle eastern meatballs. Double and freeze half. Recipe on the app and the blog.

Wednesday – Pad Thai. Recipe on the app.

Thursday – Cottage pie – meat mix from the freezer from week 44. Recipe on the app.

Friday – Leftovers / dining out / takeaway

Saturday – Indian chicken from the freezer from week 44. Recipe on the app and the blog.

Sunday – Super simple meal: Fried rice. Recipe on the app and the blog.

Snacks: Berry muffins – recipe on the app and the blog. It says makes 12 but also makes up to 24 smaller muffins in the patty pan-sized cases.
