Jacket potatoes are making their debut on the super simple meal list this week. Use any leftover ingredients or things you have in your pantry and refrigerator. We are also mixing up the lunchbox freezer offering this week with savoury muffins. Done.
MEAL PLAN #52: Spring
Monday – Chicken and chorizo braise – double and freeze half. Recipe on the app and the blog.
Tuesday – Tacos. Double the meat mixture and freeze half. Recipe on the app and the blog.
Wednesday – Crumbed chicken thighs. Recipe on the app and the blog.
Thursday – Bean quesadillas – from the freezer from week 50. Recipe on the app and the blog.

Saturday – Thai pork curry – from the freezer from week 50. Recipe on the blog.
Sunday – Super simple meal: Jacket potatoes. Microwave or boil the potatoes and fill, then put under the grill to melt the cheese, if using. Use any ingredients you like: baked beans; tuna peas and corn with yoghurt; bacon, avocado and cheese; corn, spinach and bacon are some of our options. Top any of them with sour cream or yoghurt.
