Chia seeds are all the rage: high in fibre, gluten free, low carb – plenty of touchpoints for modern cooking. Here we show you how to make a simple breakfast that you could have as an alternative to bircher muesli.
CHIA BREAKFAST PUDDING

Ingredients
- ¼ cup of chia seeds
- 180ml / ¾ cup of milk of your choice (cows’, rice, soy or almond) or coconut water
- orange zest
- peeled orange segments
- maple syrup (optional)
Method
- Combine the chia seeds and milk or coconut water into a glass or jar and set aside for 20 minutes.
- Once ready to eat, add some orange zest (from about ¼ of the orange) and a few orange segments.
- Top with maple syrup if using.
TIP
You can prepare a few serves in advance by storing daily portions in jars in the refrigerator.
