Chia breakfast pudding

Chia seeds are all the rage: high in fibre, gluten free, low carb – plenty of touchpoints for modern cooking. Here we show you how to make a simple breakfast that you could have as an alternative to bircher muesli.

 CHIA BREAKFAST PUDDING

Prep: 2 mins
Cook: 20 mins
Serves: 1

Ingredients

  • ¼ cup of chia seeds
  • 180ml / ¾ cup of milk of your choice (cows’, rice, soy or almond) or coconut water
  • orange zest
  • peeled orange segments
  • maple syrup (optional)

Method

  1. Combine the chia seeds and milk or coconut water into a glass or jar and set aside for 20 minutes.
  2. Once ready to eat, add some orange zest (from about ¼ of the orange) and a few orange segments.
  3. Top with maple syrup if using.

TIP
You can prepare a few serves in advance by storing daily portions in jars in the refrigerator.
