Even though summer is drawing to a close (although it doesn’t feel like it) we still want plenty of easy meals. The meatballs can be served with pasta or crusty bread, and also good for lunch boxes or snacks without the sauce  This week we are doubling the Indian chicken marinade and the meatballs. Remember to schedule in meals you have previously doubled and frozen, and start to incorporate them into your weekly meal plan. 

MEAL PLAN #15: SUMMER

Monday – Italian meatballs. Recipe on the app and the blog. Double the recipe and freeze half. The meatballs are also great for lunch boxes (without the tomato sauce)

Tuesday – Eggplant kebabs. Recipes on the app.

Wednesday – Fish cakes. Recipe on the app and the blog.

Thursday – Indian chicken marinade, with rice and steamed greens. Double recipe and freeze half. Recipe on the app and the blog.

Friday – Leftovers or something from the freezer from your food banked meals

Saturday – Sausages and mash. Recipe on the app (ok we know you probably don’t need it, but it will add it to your shopping list) and the blog.

Sunday – Basic omelette (recipe on the app and the blog) or Asian omelette (recipe on the blog).

Snacks: Tea cake – recipe on the app and the blog.

Salads are best served at room temperature. If making them in advance, take them out of the refrigerator in time to get to room temp.
