I’m not sure about your family, but I could serve up crumbed chicken thighs almost weekly here and they never seem to tire of it. Great in any season, but in winter it is a good opportunity to serve with extra veggies.  The lamb mince recipe is a great one-pot meal, and pantry tuna pasta rounds off the week for an easy Sunday night dinner. Stick with our meal planning approach to cut your cooking time by half each week.

MEAL PLAN #40: Winter

Monday – Lamb mince with yoghurt topping – double the meat mixture and freeze half. Recipe on the app.

Tuesday – Chick pea curry. Double recipe and freeze half. Recipe on the app and the blog.

Wednesday – Crumbed chicken thighs. Recipe on the app and the blog.

Thursday – Osso buco from the freezer from week 38. Recipe on the app and the blog.

Friday – Leftovers / dining out / takeaway

Saturday – Bean quesadillas from the freezer from week 38. Recipe on the app and the blog.

Sunday – Super simple meal: Pantry tuna pasta. Recipe on the app and the blog.

Snacks: Choc chip weetbix slice – recipe on the app and the blog. Cut into portions before freezing.
